Basil, Tomato And Onion Salad With Cheese Recipe

Ingredients
  • 1 sm Red onion, thinly sliced
  • 2 lb Small new potatoes, cut into chunks
  • 1 lb Green beans, trimmed & cut into 2 inch pieces

Directions
  • Step #1 --DRESSING----- 1/2 c Packed fresh basil 1/3 c Chicken stock or vegetable -stock 1/4 c Olive oil 1/4 c White wine vinegar 2 tb Dijon mustard 1 tb Balsamic vinegar 2 cl Garlic 1/2 ts Salt 1/2 ts Pepper Cook potatoes in a large saucepan of boiling salted water for 10 mins or until tender.
  • Step #2 Remove with slotted spoon to a salad bowl.
  • Step #3 Add beans to saucepan & bring to a boil; cook 3 to 5 mins or until tender-crisp.
  • Step #4 Drain & chill under cold water; drain again.
  • Step #5 Add beans & onion to salad bowl.
  • Step #6 Dressing: In a food processor/blender or mixer, wine vinegar, oil, puree basil, balsamic vinegar, mustard, garlic, stock, salt & pepper.
  • Step #7 Pour over potato mixture; toss well.
  • Step #8 Cover & put in the fridge if making ahead; serve this within 4 hrs.
  • Step #9 Yield: 6 to 8 servings.
