Basmati Rice With Galangal Recipe

Ingredients
  • Freshly ground black pepper
  • 3 tb Light vegetable oil
  • 1/2 Lemon; Juice of
  • 1/4 ts Ground clove
  • Coarse salt to taste
  • 1 lb Okra; stemmed & cut into 1/8 inch rings
  • 1 1/2 c Raw basmati rice

Directions
  • Step #1 Wash the rice thoroughly in several changes of water & put in a bowl.
  • Step #2 Add enough water to cover the rice by an inch.
  • Step #3 Soak the rice for 1/2 hr (maximum 2 hrs).
  • Step #4 Meanwhile bring 3 quarts of salted water to a boil in a deep pot & prepare the croutons.
  • Step #5 Heat the oil in a large frying pan over high heat until hot & add okra.
  • Step #6 Reduce heat & cook okra, stirring & shaking, until brown & crisp, about 20 mins.
  • Step #7 Sprinkle top with the lemon juice, clove, & black pepper.
  • Step #8 Reduce heat to minimum & keep warm while you cook the rice.
  • Step #9 Drain the rice & add to the boiling water, stirring to prevent the rice from settling.
  • Step #10 Bring the water to a boil again & cook the rice for exactly 4 mins.
  • Step #11 Drain the rice well in a large sieve held over the sink & transfer to a heated platter.
  • Step #12 Scatter okra croutons on top & serve.
  • Step #13 Yield: 4 servings.
