Bb King's Beale Street Blues Sauce Recipe

Ingredients
  • 2 tb Worcestershire sauce
  • 1 tb Liquid smoke
  • 2 lb sliced onion
  • 1 lb sliced green pepper
  • Brown Roux;
  • 2 tb Beef base
  • 4 c Red wine;
  • 1 lb Sliced mushrooms
  • 1 lb sliced red pepper
  • 2 oz Minced garlic
  • 2 qt Dark beer
  • 2 tb Tabasco sauce
  • 2 qt Water
  • 1 c Louisiana Spice uping
  • 1 lb sliced celery
  • 4 tb Chicken base
  • 2 1/2 oz Flour
  • 1 lb Butter;

Directions
  • Step #1 -BROWN ROUX---- 10 oz Flour 1 c Vegetable oil In a large skillet or saut? pan, add butter.
  • Step #2 Put onion, red pepper, green pepper, celery, mushrooms in pan & saut?.
  • Step #3 Then add garlic and saut? for 1 min.
  • Step #4 Add flour & stir; cook for 1 min.
  • Step #5 Add red wine & reduce until thick.
  • Step #6 Add dark beer, beef base, water, chicken base & bring to a boil.
  • Step #7 Then add liquid smoke, Worcestershire sauce, Tabasco sauce and Louisiana Spice uping.
  • Step #8 Whip some roux into the sauce.
  • Step #9 Bring to a boil then remove this from heat.
  • Step #10 Put some premade rice on a plate, put cooked chicken breast on top of rice & ladle voodoo sauce over the chicken & rice.
  • Step #11 Brown Roux: Place oil in a heavy stock pot & heat until it smokes.
  • Step #12 Slowly whisk in flour, 2 c at a time, mixing well.
  • Step #13 Cook in oven at 350 degrees for about 2 hrs stirring every 15 mins.
  • Step #14 Roux is done when chocolate brown color is achieved.
  • Step #15 allow this to cool.
  • Step #16 Yields 1 lb of Roux.
