Bbq Duck Sandwich Recipe

Ingredients
  • 1/2 c Spicy Mango Salsa; see Note 2
  • Freshly ground black pepper; to taste
  • 1/2 c Chicken stock
  • 1/2 c Grilled; sliced Shiitake mushrooms caps
  • 1/4 c Grated white cheddar cheese
  • 1/4 c Grated Monterey Jack cheese
  • 1 c New Mexico-Style Barbecue Sauce; see Note 1
  • 3 Six-inch flour tortillas
  • 2 Skinless duck legs
  • Salt; to taste

Directions
  • Step #1 Note 1: See the "New Mexico-Style Barbecue Sauce" recipe which is included in this collection.
  • Step #2 Note 2: See the "Spicy Mango Salsa" recipe which is included in this collection.
  • Step #3 Put duck legs in a casserole & brush on the New Mexico-Style Barbecue Sauce.
  • Step #4 Pour stock around legs.
  • Step #5 Cover & bake for 3 hrs at 300F degrees, basting with barbecue sauce every 30 mins.
  • Step #6 Let cool, & pick off duck meat (meat should equal at least 1/2 c.
  • Step #7 Prepare a wood or charcoal fire & let it burn down to embers.
  • Step #8 Place 2 tortillas on work surface.
  • Step #9 Spread half the cheeses, duck meat, and mushrooms on each & Spice up to taste with salt & pepper.
  • Step #10 Stack the 2 layers, cover with the remaining tortilla, brush with 1 tbsp oil, & Sprinkle top evenly with chile powder.
  • Step #11 May be prepared ahead up to this point & put in the fridged.
  • Step #12 Grill for 3 mins on each side, or until the tortillas are slightly crisp & the cheese has melted.
  • Step #13 Cut into quarters & serve hot, garnished with the Spicy Mango Salsa.
