Ingredients
Freshly ground black pepper
1/4 c sliced onions
2 c Heavy cream
3 Lemons; peeled and sectioned
Creole Spice uping
2 tb Minced garlic
1 tb Olive oil
2 c Water
1/4 c Dry white wine
1/2 lb Shrimp shells
2 Loaves French bread; cut in half and toasted
4 Dozen fresh mussels; steamed and removed from the shell
3 Bay leaves
1/2 c Worcestershire sauce
1/4 ts Salt
Directions
Step #1 Spice up the steamed mussels with Creole Spice uping & pepper.
Step #2 put in the fridge the mussels while you make the sauce base & biscuits.
Step #3 Heat oil in a large pot over high heat.
Step #4 When the oil is hot, add the onions & garlic & saute for 1 min.
Step #5 Add the shrimp shells, Creole Spice uping, bay leaves, water, lemons, salt, Worcestershire, wine, & 8 turns of black pepper.
Step #6 Stir well & bring to a boil.
Step #7 Reduce the heat & let simmer for 30 mins.
Step #8 remove this from the heat, allow this to cool for about 15 mins & strain into a small saucepan.
Step #9 There should be about 1 1/2 c.
Step #10 Place over high heat, bring to a boil, & dark brown, & cook this until thick, syrupy, for about 15 mins.
Step #11 Makes about 4 to 5 tbsps of barbecue sauce base.
Step #12 In a large saute pan, add the cream & all of the barbecue base.
Step #13 Stir and simmer for 3 mins.
Step #14 Add the cooked mussels to the sauce.
Step #15 Toss quickly.
Step #16 To serve, slice the French bread lengthwise & open.
Step #17 Spoon the BBQ mussels into the bread.
Step #18 Slice & serve.
Step #19 Yield: 4 servings.
