2 Hungarian peppers or mild hot pepper; sliced see note
1 lg Bell pepper; sliced
1 tb Corn or peanut oil
2 ts Minced garlic; to taste
2 qt Water
1 tb Caraway seed; crushed in a mortar
4 Stalks celery; cut into bite size
1 lg Onion; sliced
1 Leek; sliced thickly
Directions
Step #1 -DUMPLINGS---- 1 c Biscuit mix 2 Egg 1/4 c To 1/3 soymilk or low fat -milk; desired moistened SOUP: Soak the beans overnight in water to cover.
Step #2 Add the beans.
Step #3 , 2 quarts water, garlic, onion, leek & caraway to your pressure cooker.
Step #4 Bring to pressure, then then lower heat to medium- low.
Step #5 Cook for to mins under pressure.
Step #6 Let the pressure drop naturally.
Step #7 Remove the lid & add the remaining soup ingredients DUMPLINGS: Mix together all the dumpling ingredients.
Step #8 Drop the mixture by the tbspful into the soup.
Step #9 Bring the soup back to al boil.
Step #10 Cook, Nucooked, until the dumplings are cooked & the vegetables are tender about 15 mins.
Step #11 NOTES : Instead of Hungarian pepper, you may use 1 poblano pepper or 1/4 tsp hot paprika.
