Bean And Swiss Chard Soup Recipe

Ingredients
  • 1/2 lb Bacon
  • Three; cans red kidney beans, drained & well rinsed
  • 2 lb Sauerkraut; well rinsed
  • 3 lg Baking potatoes; peeled and quartered
  • 10 Cloves garlic
  • Salt & freshly ground black pepper
  • 2 Bay leaves
  • 2 md Loin pork chops; cut into small cubes
  • 4 qt Water

Directions
  • Step #1 In a large stock pot, pork chop cubes, add the beans, over high heat, bay leaves & water & bring to a gentle boil.
  • Step #2 In the top of a food processor/blender, mix the bacon & garlic until mixd.
  • Step #3 Reduce the heat, add the bacon/garlic mixture to the soup & let simmer carefully for 1 hr.
  • Step #4 Add the sauerkraut & potatoes to the soup & cook for another 30 mins.
  • Step #5 Keeping the soup on the heat, remove the potatoes, mash them, and return them to the pot.
  • Step #6 Spice up this with salt & pepper to taste and carefully simmer for another 20 mins.
  • Step #7 Add some water if the soup is too thick.
  • Step #8 Discard the bay leaves & serve.
