Bean Salad Recipe Recipe

Ingredients
  • Juice & zest of 1 lime
  • Warm pitta bread or naan bread for dipping
  • Salt & freshly ground black pepper
  • 2 Cloves garlic; crushed
  • 4 tb Olive oil
  • 1 432 g can chick peas; drained
  • 1 bn Coriander; roughly sliced
  • 1 Red onion; finely sliced
  • 1 lg Pink grapefruit; peeled and segmented
  • 1 432 g can flageolet beans; drained & rinsed

Directions
  • Step #1 Put 3/4 of the chick peas & 3/4 of the flageolet beans in a food processor with the garlic, olive oil (reserving two tsps for the relish) & juice & zest of lime.
  • Step #2 Add half the coriander & Spice up well.
  • Step #3 Whizz until smooth & creamy, adding a little water if necessary.
  • Step #4 To make the relish, olive oil, toss the remaining chick peas & flageolet beans in a small bowl with the grapefruit segments, finely sliced onion & coriander.
  • Step #5 Spice up to taste.
  • Step #6 Pile the creamy dip into a shallow serving dish or plate & scatter over the grapefruit relish.
  • Step #7 Grind over plenty of black pepper.
  • Step #8 Chill until required.
