Step #1 Put 3/4 of the chick peas & 3/4 of the flageolet beans in a food processor with the garlic, olive oil (reserving two tsps for the relish) & juice & zest of lime.
Step #2 Add half the coriander & Spice up well.
Step #3 Whizz until smooth & creamy, adding a little water if necessary.
Step #4 To make the relish, olive oil, toss the remaining chick peas & flageolet beans in a small bowl with the grapefruit segments, finely sliced onion & coriander.
Step #5 Spice up to taste.
Step #6 Pile the creamy dip into a shallow serving dish or plate & scatter over the grapefruit relish.
