Ingredients
  • 1 c Dry Vermouth
  • 2 tb All-Purpose Flour
  • 1 c sliced Onion
  • 14 1/2 oz sliced Tomatoes; Undrained
  • 3 c Button Mushrooms; Halved
  • 1 c Low-Salt Chicken Broth
  • 1 ts Dried Basil
  • 1 lb Lean Beef
  • 1/2 ts Dried Thyme
  • Flat Leaf Parsley Sprigs; Optional
  • Vegetable Cooking Spray
  • 1/8 ts Salt
  • 1/4 ts Pepper
  • 3 tb Fresh Orange Juice
  • 3 Garlic Cloves; Crushed

Directions
  • Step #1 Trim fat from beef; cut beef into 1 inch cubes.
  • Step #2 Place a large nonstick skillet coated with cooking spray; over medium high heat until hot.
  • Step #3 Add beef & onion; saut? 5 mins.
  • Step #4 mix flour, & cook 1 min, salt, & pepper; Sprinkle top it over beef mixture, stirring constantly.
  • Step #5 Add mushrooms & next 7 ingredients (mushrooms through tomatoes); bring to a boil.
  • Step #6 Reduce heat, & let simmer uncovered, 40 mins or until beef is tender, stirring every once in awhile.
  • Step #7 Garnish with parsley if desired.
