Beef Rouladen (tony's Beef) Recipe

Ingredients
  • 1 lg Onion; cut into wedges
  • 8 sl Top round steak; 1/4" thick
  • Salt & pepper; to taste
  • 3 tb Cooking oil
  • 3 c Beef broth
  • 1/3 c All-purpose flour
  • 1/4 c Dijon mustard
  • 8 Strips bacon
  • Fresh parsley; sliced, optional
  • 1/2 c Water

Directions
  • Step #1 Lightly spread mustard on each slice of steak; Sprinkle top with salt and pepper.
  • Step #2 Place 1 bacon strip & a few onion wedges on each slice; roll up & secure with wooden picks.
  • Step #3 Brown in a skillet in oil; drain.
  • Step #4 Add broth; bring to a boil.
  • Step #5 Reduce heat; cover & let simmer for 1-1/2 hrs or until meat is tender.
  • Step #6 Remove meat & keep warm.
  • Step #7 mix flour & water until smooth; stir in theto broth.
  • Step #8 Bring to a boil, stirring constantly until thickened & bubbly.
  • Step #9 Remove wooden picks from meat & return to gravy; heat through.
  • Step #10 Sprinkle top with parsley if desired.
