Step #1
Preheat the oven to 350 degrees F (175 degrees C).
Step #2 In a medium bowl, bread crumbs, mascarpone cheese, oregano, mix together the ricotta cheese, sun-dried tomatoes, salt & pepper until well mixed.
Step #3 Set aside.
Step #4 Bring a large pot of lightly salted water to a boil.
Step #5 Trim the ends of the squid bodies to make them an even size, & rinse out the tubes.
Step #6 Spoon the cheese mixture into the cavities of the squid until full, & secure the open ends with toothpicks.
Step #7 Place in boiling water, & cook for 6 mins.
Step #8 Remove the stuffed calamari tubes from the water, & place this in a baking dish.
Step #9 Bake for 20 mins in the preheated oven.
Step #10 Melt butter in a large skillet over med-heat/flame.
Step #11 Add garlic & sesame seeds.
Step #12 Place the calamari tubes in the skillet, & fry on all sides until golden brown.
