Beefy Spuds Recipe

Ingredients
  • 1 c Minced onions
  • 1 c Peeled; seeded & sliced Roma tomatoes
  • Oil; for frying
  • 1/4 lb Grated Cheddar cheese --;
  • 1 tb Olive oil
  • 6 Corn tortillas; cut into eighths
  • Salt; to taste
  • 1 tb sliced cilantro
  • 1 c Shredded lettuce
  • 1/2 c Sour cream
  • 1/4 c Pickled jalapenos
  • 1 c Veal stock
  • Cayenne pepper; to taste
  • 1 ts Cumin
  • 1 lb Lean ground beef
  • Emeril's Essence; see Note
  • 1 tb Chili powder
  • 1/4 lb Grated Jalapeno Monterey Jack cheese;
  • 6 Flour tortillas; cut into eighths
  • 1 tb Minced garlic

Directions
  • Step #1 Note: See the "Emeril's Essence Information" recipe which is included in this collection.
  • Step #2 Preheat the fryer.
  • Step #3 When the oil is hot, until crispy, about 2 to 3 mins, fry the tortillas in batches, stirring constantly.
  • Step #4 Remove the chips from the oil & drain on a paper-lined plate.
  • Step #5 Spice up the chips with Emeril's Essence.
  • Step #6 In a large saute pan, heat the oil.
  • Step #7 When the oil is hot, add the ground beef, stirring constantly.
  • Step #8 Spice up the beef with Essence.
  • Step #9 Brown the beef for 2 mins.
  • Step #10 Add the onions and continue to brown for 3 to 4 mins.
  • Step #11 stir in the the chili powder, cumin, & garlic.
  • Step #12 Add the stock & bring the liquid to a simmer.
  • Step #13 Simmer for 2 to 3 mins, or until the liquid reduces by 1/4.
  • Step #14 Remove the pan from the heat.
  • Step #15 Lay the chips on a large platter.
  • Step #16 Spoon the beef mixture over the chips.
  • Step #17 Sprinkle top the meat with the two cheeses.
  • Step #18 Top the cheese with the lettuce, tomatoes, sour cream & jalapenos.
  • Step #19 Garnish the nachos with the cilantro.
  • Step #20 This recipe yields 4 servings.
