Chocolate Marshmallow Meltaways Recipe

Ingredients
  • 1 tsp vanilla extract
  • 1 3/4 c all-purpose flour
  • 1/4 c milk
  • 3 tbsps baking cocoa
  • 4 tbsps milk
  • 1/2 tsp baking soda
  • 1/2 c baking cocoa
  • 3/4 c sugar
  • 3 c confectioners' sugar
  • 3 tbsps butter or margarine, softened
  • 1 egg
  • 18 large marshmallows, halved
  • FROSTING:
  • 1/2 c butter flavored shortening
  • 1/8 tsp salt
  • 1/2 tsp salt

Directions
  • Step #1 In a mixing bowl, cream shortening & sugar.
  • Step #2 Beat in egg, milk & vanilla.
  • Step #3 Combine flour, cocoa, baking soda & salt; slowly add to the creamed mixture.
  • Step #4 Drop by tbspfuls 2 in.
  • Step #5 apart onto ungreased baking sheets.
  • Step #6 Bake at 350 degrees F for 8 mins.
  • Step #7 Press a marshmallow, cut side down, onto each cookie.
  • Step #8 Bake 2 mins longer.
  • Step #9 Remove to wire racks to cool.
  • Step #10 In a mixing bowl, sugar, cream butter, cocoa & salt.
  • Step #11 Add enough milk to achieve spreading consistency.
  • Step #12 Frost cooled cookies.
