Beetle Oatmeal Cookies Recipe

Ingredients
  • 3 oz Walnut halves; toasted
  • 1 Pinches sugar
  • 2 tb Walnut oil
  • 1 1/2 tb Red wine vinegar
  • 1 lb Beet
  • 3 Orange; 2 segmented, 1 juiced & reserved
  • 1 Head gem lettuce; washed, cut in half horizontally
  • Salt & freshly ground pepper
  • 3 tb Olive oil

Directions
  • Step #1 Preheat the oven to 375F.
  • Step #2 Wash the beets & place this in a baking dish.
  • Step #3 Drizzle with 1 tbsp of olive oil.
  • Step #4 Cover the dish with foil & bake for 45 to 60 mins, until the tip of a knife can be inserted easily into the beets.
  • Step #5 remove this from the oven, allow this to cool.
  • Step #6 Peel the beet skins & discard.
  • Step #7 Cut the beets into wedges.
  • Step #8 Whisk together the orange juice, red wine vinegar, the remaining 2 tbsps olive oil & 1 tbsp walnut oil, salt & pepper.
  • Step #9 Toss the lettuce with three quarters of the vinaigrette & place on a platter.
  • Step #10 Toss the beets with the remaining vinaigrette.
  • Step #11 Garnish the salad with the beets, orange sections & walnuts.
  • Step #12 Serve as soon as possible.
