Beetroot And Blackcurrant Relish Recipe

Ingredients
  • 500 g Uncooked beetroot
  • 1 ts Lemon juice
  • Black pepper
  • 1 Onion
  • 600 ml Unsweetened apple juice
  • 150 ml Sour cream

Directions
  • Step #1 Peel & grate the beetroot & onion.
  • Step #2 Process with a cful of apple juice until smooth, add the rest of the juice, Spice up & chill.
  • Step #3 Looks best in glass bowls, served with a swirl of sour cream.
  • Step #4 For convenience you could use organic beetroot juice (from health stores) not quite so thick but still delicious.
  • Step #5 If you think beetroot is a sad vinegary thing on motorway service salads, think again.
  • Step #6 They are very low in calories, a tonic for blood & a boost for chronic fatigue.
  • Step #7 Beetroot dramatically increases the oxygen-carrying capacity of the blood.
