Beetroot And Horseradish Gratin Recipe

Ingredients
  • 30 ml Olive oil
  • 450 g Raw beetroot; sliced
  • 30 ml Cider vinegar
  • 1 Potato; sliced
  • Salt & freshly ground black pepper
  • 1 Onion; sliced
  • 1 Clove garlic; crushed
  • 1 ts Caraway seeds
  • Sour cream or Greek yoghurt to garnish
  • 900 ml Vegetable stock

Directions
  • Step #1 1.
  • Step #2 Heat the oil, add the onion & saut? carefully, then add the garlic & caraway seeds.
  • Step #3 Cook for a further 3 mins, stirring every once in awhile.
  • Step #4 Add the beetroot, cover & let simmer for about 1 hr, potato, cider vinegar & stock, until the beetroot is tender.
  • Step #5 2.
  • Step #6 Spice up to taste, allow this to cool slightly, & then pur? in a food processor or mixer.
  • Step #7 3.
  • Step #8 Return to the pan, reheat & garnish with a swirl of sour cream or Greek yoghurt before serving.
  • Step #9 Accompany with sweet rye bread.
