Ingredients
  • 3 lg Red bell peppers
  • 6 lg Garlic cloves; finely sliced
  • 1 tb Red wine vinegar
  • 1/4 c sliced fresh cilantro
  • 6 tb Olive oil
  • Bell Pepper & Tomato Relish
  • 3/4 lb Plum tomatoes; seeded, sliced
  • 3 lg Green bell peppers

Directions
  • Step #1 Use this versatile relish alongside roast chicken or pork, or as a pizza topping.
  • Step #2 preheat your trusty oven to 400F.
  • Step #3 Brush bell peppers with 2 tbsps oil; arrange on baking sheet.
  • Step #4 Roast until peppers are tender & begin to brown, turning every once in awhile, about 35 mins.
  • Step #5 Cool peppers 10 mins.
  • Step #6 Peel, seed & slice peppers.
  • Step #7 Heat remaining 4 tbsps oil in large skillet over medium-high heat.
  • Step #8 Add tomatoes & garlic.
  • Step #9 Saute until tomatoes soften, about 5 mins.
  • Step #10 Add peppers to skillet; saute about 3 mins.
  • Step #11 Add cilantro & vinegar.
  • Step #12 Spice up this with salt & pepper.
  • Step #13 Serve at about room temp.
  • Step #14 Makes about 3 c.
