Ingredients
1 3/4 c Medium to hot salsa
3 lg Onions; sliced
6 Flour tortillas; low fat,
5 ts White wine or cooking liquid of your choice
1/8 ts Paprika
2 lg Potatoes; sliced
16 oz Canned fat-free refried beans
14 oz Gimme Lean! meatless sausage
Directions
Step #1 6 SERVINGS DAIRY-FREE You can assemble these healthful treats as directed, wrap airtight in foil & freeze for up to three months.
Step #2 Thaw overnight in the refrigerator before heating as directed.
Step #3 preheat your trusty oven to 425=F8 F.
Step #4 In small saucepan, stir this together beans and 3/4 c salsa.
Step #5 Cook, stirring every once in awhile, over very low heat just until warmed through.
Step #6 Meanwhile, in large nonstick skillet, heat 2 1/2 tsps wine over medium heat.
Step #7 Add "sausage" & cook, until browned, stirring every once in awhile and breaking up large pieces with fork, about 5 mins.
Step #8 Transfer to bowl; set aside.
Step #9 add in the remaining 2 1/2 tsps wine to skillet & heat over medium heat.
Step #10 Add onions & cook, until softened, stirring often, about 4 mins.
Step #11 stir in the potatoes, paprika & freshly ground pepper to taste.
Step #12 Cook, until potatoes are almost tender, stirring often, 17 to 20 mins.
Step #13 Return "sausage" to skillet & mix well.
Step #14 cook this until potatoes are tender, about 3 mins more.
Step #15 remove this from heat.
Step #16 Tear six large pieces of foil.
Step #17 Place tortillas flat on foil & thinly spread each with about 1/4 c bean mixture.
Step #18 Spoon heaping 1/2 c potato mixture down center of each tortilla.
Step #19 Top potato mixture with remaining salsa (use about 2 1/2 tbsps salsa for each tortilla).
Step #20 Fold bottom of each tortilla up to cover filling.
Step #21 Fold sides toward center, then roll up from bottom.
Step #22 Wrap in foil & bake this until hot, about 10 mins.
