Better Bran Muffins Recipe

Ingredients
  • 1/4 c Freshly-grated Monterey jack cheese
  • 2 tb Fresh lime juice
  • 2 tb Dijon mustard
  • 1 Fresh jalapeno pepper; seeded, sliced
  • 4 Flour tortillas; grilled and sliced
  • 1/4 ts Salt
  • 2 lg Garlic cloves; finely sliced
  • 2 tb White wine vinegar
  • 1/2 c Extra-virgin olive oil
  • Freshly-ground black pepper; to taste
  • 2 oz Anchovy fillets - ; drained, chop fine
  • & sliced
  • 1/2 Ripe avocado; peeled, pitted,
  • 1 Romaine lettuce head

Directions
  • Step #1 Clean the lettuce of the tough outer leaves, hand-tear into bite size pieces, & carefully wash & dry.
  • Step #2 In a wooden bowl mix the sliced avocado & lime juice & mash the avocado with the back of a spoon.
  • Step #3 Add the garlic, vinegar, mustard, jalapeno & salt and mix the mixture until creamy.
  • Step #4 Add half the olive oil & stir this to incorporate.
  • Step #5 Add the Romaine lettuce leaves & coat them completely.
  • Step #6 Add the remaining olive oil by pouring in a very patient, slow, steady stream to produce a smooth, creaminess to the salad.
  • Step #7 Add the anchovies by mixing in evenly the sliced bits.
  • Step #8 Spice up this with freshly-ground black pepper to taste.
  • Step #9 Add the jack cheese & the grilled tortilla slices & toss the salad again to coat the greens evenly.
  • Step #10 This recipe yields 4 to 6 salads.
