Biddy's Flapjacks Recipe

Ingredients
  • 1 pk dry yeast
  • 1 Egg yolk; beaten with
  • ---DOUGH------
  • 3 1/2 c Flour
  • 1 Egg; separated
  • 1 1/2 c water; warm
  • 3 tb Corn oil
  • 1/2 ts Corn oil
  • 1 ts Sugar

Directions
  • Step #1 -STUFFINGS---- SQUASH; CALABASA, OR ; PUMPKIN 1/4 c Corn oil 2 md (2 c) onions; sliced 1 c - water; hot & 1/4 t salt 2 tb Sugar 1 lb Butternut squash; calabasa, -or ; pumpkin,----MEAT------- 2 tb Corn oil 3 md (2 c) onion; sliced 1 lb Ground beef or lamb 1/2 ts Salt; or to taste 1/4 ts Pepper; peeled & cut into ; 1/2-in pieces---CHEESE------ 1 lb Farmer cheese 1 Egg yolk; beaten 3 tb Sugar 1/2 ts Ground cinnamon----JAM------- 1 c Strawberry or grape or prune -jam; (lekach) 2 tb Bread crumbs Bichak are popular appetizers for tea or coffee hr.
  • Step #2 The pumpkin & jam stuffings are on the sweet side while meat & cheese are savory & could be eaten for lunches w/salad & dish of yoghurt.
  • Step #3 An added attraction is that they may be prepared in large quantities, cooled & frozen for the future.
  • Step #4 Heat oil in a pan, add onions, & saute over moderate heat until onions turn golden.
  • Step #5 Add water, salt, sugar, & squash or calabasa or pumpkin & bring to a boil.
  • Step #6 Cover pan & cook over low heat/flame for abt 20 mins as squash/calabasa/pumpkin becomes soft & disintegrates.
  • Step #7 Stir now & then, which in effect mashes contents.
  • Step #8 Continue last mins of cooking, uncovered, to evaporate all liquid & create & thick jam.
  • Step #9 The mash is still moist.
  • Step #10 MEAT: Heat oil in a skillet & brown onions lightly over moderate heat.
  • Step #11 Add meat, & pepper & stir-fry for 5 mins, salt, making certain liquid has evaporated & mixture is dry.
  • Step #12 Cool.
  • Step #13 CHEESE: Mix everything together.
  • Step #14 Set aside.
  • Step #15 JAM: Mix jam & crumbs together.
  • Step #16 Set aside.
  • Step #17 TO PREPARE TRICORNERS: 1.
  • Step #18 Mix 1/2 c warm water, sugar, & yeast together & proof in a warm place until mixture foams, abt 10 mins.
  • Step #19 2.
  • Step #20 Make a well in flour, add yeast mixture, oil, & 1 egg white, & stir them into flour.
  • Step #21 Add balance of water, or enough water to prepare a soft dough.
  • Step #22 Knead for several mins & roll this into a ball.
  • Step #23 Oil top lightly & leave dough in mixing bowl.
  • Step #24 Cover bowl w/foil or a towel & let rise for 45 mins to 1 hr.
  • Step #25 3.
  • Step #26 Punch down dough ball.
  • Step #27 Pull off abt 1/2 c of dough & roll this into a slightly flattened ball.
  • Step #28 Prepare 6 balls.
  • Step #29 4.
  • Step #30 On well-floured board roll out each ball, 1 at a time, to 12-" pancake.
  • Step #31 Using empty can or a cookie cutter, 3-" in diameter, cut out circles in pancake.
  • Step #32 Put 1 tb of whichever stuffing you are using, or variety of stuffings, in center of each circle.
  • Step #33 Fold over right & left side of circle to meet in the center & bring up bottom to cover stuffing.
  • Step #34 Pinch ends together to form tricorner pastry.
  • Step #35 Seal in contents.
  • Step #36 Paint tops of bichak w/egg yolk.
  • Step #37 5.
  • Step #38 Line baking pan or cookie sheet w/lightly oiled aluminum foil.
  • Step #39 Place tricorners on foil & bake in a preheated 350F.
  • Step #40 oven for abt 40 mins, or until brown.
  • Step #41 Serve warm.
  • Step #42 Makes 48 to 50 bichak.
  • Step #43 NOTE: Cool bichak, store this in plastic bags, & freeze.
  • Step #44 To serve, thaw out frozen bichak for 1/2 hr & heat in preheated 350F.
  • Step #45 oven for 5-10 mins.
