Big Beautiful White Pan Loaves Recipe

Ingredients
  • 5 c sliced onions; in all
  • 1/4 c Vegetable oil
  • 1/2 c Freshly squeezed lemon juice
  • 1/2 Unpeeled medium orange; cut into quarters
  • 2 c sliced celery; in all
  • 2 tb Minced fresh garlic
  • 1 1/4 c Packed dark brown sugar; in all
  • 1 tb Grated fresh lemon peel
  • 1 c Canned tomato pur?e
  • 5 tb Chef Paul Prudhomme's Barbecue Magic or Chef Paul Prudhomme's Meat Magic; in all
  • 1/2 c Cider vinegar
  • 4 Bay leaves
  • 2 c Crushed canned tomatoes
  • 5 c Chicken stock; in all
  • 1/4 c margarine

Directions
  • Step #1 ~ Makes about 2 quarts Melt the margarine with the oil in a heavy 12-inch skillet over high heat.
  • Step #2 When it sizzles, stir in the 4 tbsps of the Meat Magic.
  • Step #3 Cook, stirring constantly, until the Meat Magic starts to darken, about 1 min.
  • Step #4 Add 3 c of the onions & 1 c of the celery, stir well, & cook for 2 mins.
  • Step #5 Cover & cook for 3 mins, then stir and scrape the pan bottom well.
  • Step #6 Cover & cook for another 3 mins, then stir & scrape the pan bottom again.
  • Step #7 Cover & cook 3-1/2 mins more, then stir & scrape up all the brown bits.
  • Step #8 Cover again & cook for 3 mins, then add the lemon juice & deglaze the pan.
  • Step #9 Scrape the sides & bottom of the pan to get up all the brown bits, & cook, stirring every once in awhile, for 1 min.
  • Step #10 Add the crushed tomatoes, 1/2 c of the brown sugar, garlic, tomato pur?e, & the lemon peel.
  • Step #11 Cook for 2 mins, then add the orange quarters & the remaining Meat Magic.
  • Step #12 Cook, stirring every once in awhile, for 3 mins more.
  • Step #13 Add 2 c of the stock, the remaining onions and celery, & the bay leaves.
  • Step #14 Stir well & cook, stirring every once in awhile, for 7 mins.
  • Step #15 stir in the 1 c more stock & bring to a boil, stirring every once in awhile.
  • Step #16 Reduce the heat to low & let simmer, stirring every once in awhile, for 30 mins.
  • Step #17 stir in the 1 c more stock, the remaining brown sugar & the vinegar.
  • Step #18 Cook, stirring every once in awhile, for 40 mins.
  • Step #19 stir in the the remaining stock & cook, stirring every once in awhile, until the sauce thickens somewhat & the flavors mix, about 45 mins.
