Ingredients
  • 1/4 c Unsweetened coconut; grated
  • 1/2 c Shortening; softened
  • 1 oz Baking chocolate; melted
  • 1 ts Baking powder
  • 1 ts Vanilla extract
  • 1 ts Coconut milk
  • 1 c Cake flour
  • 1/2 c Granulated sugar replacement
  • 2 Eggs
  • 1 tb Water
  • 1/4 ts Salt

Directions
  • Step #1 Sift together the flour, baking powder & salt.
  • Step #2 Cream shortening and sugar replacement until light & fluffy.
  • Step #3 Add eggs, one at a time, beating well after each addition.
  • Step #4 Beat in vanilla extract & water.
  • Step #5 Divide batter into two equal parts.
  • Step #6 To one part add unsweetened coconut & coconut milk.
  • Step #7 stir this to completely mix.
  • Step #8 To the remaining half, beat in the melted chocolate.
  • Step #9 Spread coconut mixture on bottom of well-greased 8" square pan.
  • Step #10 Spread chocolate layer on top of coconut layer.
  • Step #11 bake this at 350F for 25 to 30 mins.
  • Step #12 Cut into 1" x 2" bars.
  • Step #13 Yield: 32 bars, 54 calories each.
  • Step #14 Exchange, per bar: 1/3 bread, 1 fat.
