Black Bean Burritos Recipe

Ingredients
  • 15 oz Canned black beans; drained
  • 1 tb Extra virgin olive oil
  • 1/4 ts Chili powder
  • 1/2 c Grated onion; squeezed dry
  • 2/3 c Bulgur
  • 1 Avocado; peeled, halved and pitted
  • 1/4 ts Salt
  • 1 tb Vegetable oil; approximately
  • 2 Green onions; thinly sliced on the diagonal
  • 1 Tomato; peeled, seeded and sliced
  • 1/4 c Salsa
  • 1/4 ts Ground cumin
  • 1 ds Freshly ground black pepper
  • 1 1/4 c Boiling water
  • 1 ts Minced fresh cilantro
  • 1 tb Fresh parsley
  • 1/2 Jalapeno chile pepper; seeded & coarsely sliced
  • 4 Hamburger rolls
  • 1 Clove garlic; minced
  • 1/2 c Stone-ground yellow cornmeal

Directions
  • Step #1 INTRO - One of the great delights of these burgers is their wonderful aroma as they cook.
  • Step #2 1) Place bulgur in a small bowl & cover with boiling water.
  • Step #3 Let stand 10 mins.
  • Step #4 Drain well.
  • Step #5 Place soaked bulgur in a food processor/blender with the beans, jalapeno, parsley, salt, onion, chili powder, garlic, olive oil, cumin & pepper.
  • Step #6 Process until smooth, scraping down the sides of the bowl as necessary.
  • Step #7 2) Form bean mixture into 4 patties.
  • Step #8 Carefully dredge patties in the cornmeal.
  • Step #9 Heat oil in a nonstick skillet over med-heat/flame.
  • Step #10 Add patties & cook, turning to brown both sides, about 5 mins.
  • Step #11 3) While bean patties are cooking, mash the avocado in a small bowl & stir in the salsa & cilantro.
  • Step #12 4) To serve, top this with avocado mixture, place bean patties on rolls, sliced tomato & green onions.
  • Step #13 EACH: 531 cals, (22g fiber), 25% from fat, 86g carbs, (15g total fat), 20g protein.
