Black Bean Chili Recipe

Ingredients
  • Cut into 1-inch squares
  • 4 c Boiling water
  • Cut into 1-inch squares
  • 6 lg Plum tomatoes; sliced,
  • 1 Green bell pepper
  • 1 lg Onion; sliced
  • 1 1/2 tb Ground cumin
  • 1 Red bell pepper
  • 1 1/2 tb Chili powder
  • Drained & sliced
  • 1/2 ts Liquid smoke hickory Spice uping
  • 3 Garlic cloves; minced
  • OR 28-oz canned Italian peeled
  • 6 oz Canned tomato paste
  • Tomatoes
  • 1/4 ts Spice uped salt
  • Rinsed & picked over
  • 16 oz Packaged dried black beans

Directions
  • Step #1 The cooking time of black beans can vary a great deal depending on how long they were stored & where they were grown.
  • Step #2 With the same slow-cooker technique, black beans have at different times taken as little as 5 1/2 or 6 hrs on low or as long as 9 hrs on the same heat setting; so start checking after 5 or 6 hrs, but leave yourself some extra time, just in case.
  • Step #3 I like to top this meatless chili with shredded lettuce & carrots, & avocado, sliced tomatoes, scallions, & a dollop of sour cream or yogurt.
  • Step #4 MAKES 5 TO 6 SERVINGS 1.
  • Step #5 In a 3 1/4-quart electric slow cooker, water, mix together the beans, green & red bell peppers, garlic, Spice uped salt, cumin, chili powder, onion, & liquid smoke.

  • Step #7 Cover & cook on the low heat setting 6 to 9 hrs, or until the beans are tender.
  • Step #8 stir in the the tomato paste & tomatoes.
