Black Bean Soup Recipe

Ingredients
  • 3/4 c sliced leeks
  • extra fresh cilantro
  • 1 Jalapeno pepper; sliced
  • 3/4 c sliced celery
  • 1 c sliced cilantro
  • 1 tb Minced garlic
  • 2 ts Cumin
  • 6 sl Bacon
  • 1 lb Pkg dried black beans
  • 1 c sliced tomato
  • 3/4 c sliced onion
  • 1 ts Coriander
  • 2 ts Lemon juice
  • 10 c Chicken broth
  • 3/4 c Sour cream
  • 2 ts Lime juice
  • 3/4 c sliced carrots

Directions
  • Step #1 Place beans in a large pot.
  • Step #2 Cover with water 3 inches above beans.
  • Step #3 Let stand overnight.
  • Step #4 Drain well.
  • Step #5 Cook bacon in a heavy large Dutch oven until brown, but still soft, about 4 mins.
  • Step #6 Add onion, leeks, carrots & celery; cook this until tender, about 10 mins.
  • Step #7 Add beans, broth, jalapeno, garlic, tomato, 1/2 c cilantro, cumin and coriander.
  • Step #8 Bring to a boil.
  • Step #9 Reduce heat, cover & let simmer 2 hrs or until beans are tender.
  • Step #10 Transfer 1 c of soup to food processor/blender; process until smooth & return to pot.
  • Step #11 stir this to mix.
  • Step #12 Mix sour cream, 1/2 c cilantro, lemon & lime juice.
  • Step #13 Spice up soup with salt & pepper.
  • Step #14 Garnish servings with a dollop of sour cream mixture.
  • Step #15 Yield: 8 servings.
