Black Bean Soup Recipe

Ingredients
  • 2 tb Oil
  • 1 1/2 c Black beans
  • 1/8 ts Pepper
  • 1/4 ts Savory
  • 1 Carrot
  • 1 Onion
  • 1 Bay leaf
  • 6 c Water
  • 2 lg Garlic cloves
  • 2 Lemons
  • 2 Stalks celery
  • 1 Potato
  • 1 ts Oregano
  • 2 ts Salt

Directions
  • Step #1 Wash the beans & put them in a saucepan along with the water.
  • Step #2 Cover loosely, & let simmer for 2 1/2 hrs or so, bring to a boil, until beans are quite tender.
  • Step #3 Meantime, chop the onion & saute in the oil with garlic until soft.
  • Step #4 Crush the garlic.
  • Step #5 Chop the celery, including the leaves.
  • Step #6 Dice potato & carrot or grate on large grater.
  • Step #7 Add celery, potato, & carrot to onion & heat for several mins, stirring all the while.
  • Step #8 Add the vegetables to the beans, along with the Spice upings, in the last hr of their cooking.
  • Step #9 Bring the soup to a boil & lower the heat to simmer until the beans & vegetables are done.
  • Step #10 Puree half or all the soup if you want a thick, hearty broth.
  • Step #11 Juice one lemon & slice the other.
  • Step #12 stir in the juice & add slices just before serving.
  • Step #13 Makes about 9 c, to serve 6.
