Black Bean, Corn, And Tomato Salad Recipe

Ingredients
  • 2 Sweet red peppers; roasted, peeled and sliced 2
  • 3 tb Olive oil 45 mL
  • 3 tb Red wine vinegar 45 mL
  • 1 Clove garlic; minced 1
  • 1/3 c sliced fresh cilantro or parsley 75 mL
  • 1 c Dried black beans 250 mL
  • 1 bn Arugula or watercress; trimmed & sliced 1
  • 2 c Cooked corn niblets 500 mL
  • 1/2 ts Pepper 2 mL
  • 1 Jalapeno; sliced 1
  • 1/3 c sliced fresh basil 75 mL
  • 2 tb sliced fresh chives or green onions 25 mL
  • Salt to taste
  • 1 c Wheat berries 250 mL
  • 2 tb sliced fresh mint 25 mL

Directions
  • Step #1 Soak beans in cold water for a few hrs at about room temp or overnight in refrigerator.
  • Step #2 Rinse & drain well.
  • Step #3 In large pot, cover beans generously with water.
  • Step #4 Bring to boil, reduce heat & cook carefully for 1 to 1 1/2 hrs, or until tender.
  • Step #5 Drain well.
  • Step #6 Reserve in large bowl.
  • Step #7 Meanwhile, place wheat berries in saucepan & cover with cold water by about 4 inches/10 cm.
  • Step #8 Bring to boil & let simmer carefully for 1 to 1 1/2 hrs until tender.
  • Step #9 Drain well (berries should be chewy but tender).
  • Step #10 mix with beans.
  • Step #11 Add corn, peppers, jalapeno, cilantro, arugula, basil, mint and chives to salad.
  • Step #12 To make dressing, pepper, whisk together vinegar, garlic & salt.
  • Step #13 Whisk in olive oil.
  • Step #14 Toss dressing with salad.
  • Step #15 Taste & adjust Spice upings if necessary.
