Black Beans With Pork Recipe

Ingredients
  • 1/4 c Green bell pepper; minced
  • 1/2 c Mild salsa
  • 1/4 c Onion; minced
  • 6 Corn tortillas
  • 2 c Black beans; cooked, drained, mashed
  • 1/2 c Cheddar cheese; lowfat, grated
  • Tabasco sauce; to taste
  • 2 tb Dry sherry
  • 1 ts Olive oil
  • 1 ts Garlic; minced
  • 1 ts Ground cumin
  • 1 tb Cilantro; minced

Directions
  • Step #1 Heat olive oil & sherry in skillet over medium-high heat until simmering.
  • Step #2 Add garlic, bell pepper, onion, & cumin.
  • Step #3 Cook 5 mins, stirring frequently.
  • Step #4 Add beans & cilantro; remove this from heat, set aside.
  • Step #5 Cook each tortilla in large skillet or griddle over medium-high heat until lightly browned.
  • Step #6 Turn tortilla over & place 1/3 c bean mixture into center; top with 2 Tbsp each salsa & cheese.
  • Step #7 Cover skillet or griddle and continue cooking until cheese melts.
  • Step #8 Spice up to taste with Tabasco sauce.
  • Step #9 Per serv: 188 cals, 4 g fat, 367 mg sod.
