Black Pudding En Papillotes Recipe

Ingredients
  • 110 g Lancashire cheese;
  • 1 ts sliced chives
  • Salt & pepper
  • 1 ts sliced parsley
  • 4 sl Good black pudding
  • 450 g Maris Piper potatoes;
  • 1 Egg white

Directions
  • Step #1 Leave the potaotes in their skins & cook in boiling water until just soft.
  • Step #2 Drain & peel.
  • Step #3 Grate the potato into a bowl & mix with the herbs.
  • Step #4 Add a pinch of salt to the egg white, beat with a whisk & mix with the grated potato.
  • Step #5 Spice up this with salt & pepper.
  • Step #6 Pat out a quarter of the mix in a circle larger than the black pudding.
  • Step #7 Place pudding & 30g (1oz) of cheese in the middle, fold over the potatoes & pat into a circle.
  • Step #8 Deep fry at 160?C/310? until golden brown.
  • Step #9 serve this with poached egg & hollandaise sauce.
