Black Trumpet Mushrooms With Leeks And Garlic Recipe

Ingredients
  • 1/4 c Dry red wine
  • 1 1 oz fresh black truffle; brushed & shaved thin
  • 2/3 c Rich brown sauce; , homemade or prepared
  • Salt & freshly-ground black pepper
  • 2 tb Finely-minced shallots
  • 4 tb Unsalted butter

Directions
  • Step #1 In a heavy saucepan melt 3 tbsps of the butter over medium heat.
  • Step #2 When bubbly add shallots & saute 3 mins.
  • Step #3 Add brown sauce, red wine & truffle.
  • Step #4 Bring to a slow simmer & cook, every once in awhile swirling pan, until sauce reduces in half.
  • Step #5 remove this from heat, swirl in remaining tbsp butter & Spice up to taste with salt & pepper.
  • Step #6 Serve as soon as possible with squab, beef or veal.
  • Step #7 Yield: Scant 1 c.
