Black-bean Cakes With Southwestern Sauce^ Recipe

Ingredients
  • 1 tb Balsamic vinegar or red wine vinegar
  • 1 cn Black beans; drained, rinsed
  • sliced fresh cilantro
  • 1 lg Onion; cut into 1/2-inch pieces
  • 1 tb Plus 2 tsps chili powder
  • 1 1/4 lb Italian sausages;
  • 1 Kidney beans; drained, rinsed
  • 2 ts Ground cumin
  • 2 Jalapeno chilies; seeded, sliced
  • 1 lg Red bell pepper; cut into 1/2-inch pieces
  • 1 cn Cannellini; , drained, rinsed
  • 1 1/2 cn Crushed tomatoes in puree;
  • 1 tb Olive oil
  • Sour cream
  • 1 lg Green bell pepper; cut into 1/2-inch pieces

Directions
  • Step #1 Heat olive oil in heavy large saucepan over medium-high heat.
  • Step #2 Add Italian sausages & brown on all sides, turning every once in awhile, about 8 mins.
  • Step #3 Transfer sausage to plate.
  • Step #4 Add sliced onion to pan and saute 5 mins.
  • Step #5 Add sliced bell peppers & chilies & saute 1 min.
  • Step #6 Add chili powder & cumin & stir until aromatic, about 30 seconds.
  • Step #7 Add crushed tomatoes & beans.
  • Step #8 Simmer 15 mins to mix flavors.
  • Step #9 Cut sausage into 1/2-inch pieces.
  • Step #10 Add to chili & let simmer until cooked through, stirring every once in awhile, about 10 mins.
  • Step #11 Mix in vinegar.
  • Step #12 Spice up chili to taste with salt & pepper.
  • Step #13 (Can be prepared 2 day ahead.
  • Step #14 Cool & put in the fridge.
  • Step #15 Before serving, rewarm over medium heat.
  • Step #16 ) Spoon chili into bowls.
  • Step #17 top this with sour cream & cilantro & serve.
