Black-eyed Pea Jambalaya Recipe

Ingredients
  • 1 bn Green onions; sliced
  • Tortilla chips
  • 1 1/2 c Shredded cheddar;
  • 1 1/4 c Dried black-eyed peas
  • 1 pk Cream cheese; room temperature
  • 1 ts Cayenne pepper 1 tsp chili powder
  • 2 Garlic cloves; sliced

Directions
  • Step #1 Place peas in heavy medium saucepan.
  • Step #2 Add enough water to saucepan to cover peas by 2 inches.
  • Step #3 let this stand 30 mins.
  • Step #4 Drain.
  • Step #5 Add water to cover peas by 2 inches.
  • Step #6 Generously salt water.
  • Step #7 stir in the 1 garlic clove.
  • Step #8 Boil until peas are very tender, adding more water to pan if necessary, about 1 hr.
  • Step #9 Using slotted spoon, transfer peas to processor.
  • Step #10 Process until smooth.
  • Step #11 add in the remaining garlic clove & next 3 ingredients.
  • Step #12 Pulse until smooth.
  • Step #13 Spice up to taste with salt & pepper.
  • Step #14 Transfer dip to 8-inch-diameter pie plate or quiche dish.
  • Step #15 (Can be prepared 2 days ahead.
  • Step #16 Cover & put in the fridge.
  • Step #17 ) preheat your trusty oven to 400F.
  • Step #18 Top dip with cheddar.
  • Step #19 bake this until dip is heated through & cheese bubbles, about 20 mins.
  • Step #20 Sprinkle top dip with green onions & serve this with tortilla chips.
