Black-pepper Corn Muffins With Herb Butter Recipe

Ingredients
  • 1/2 c Virgin olive oil
  • 1 tb Fresh rosemary leaves
  • 5 Garlic cloves
  • 1 c Pitted black olives
  • 5 Anchovy fillets
  • 1/2 ts Freshly-ground black pepper

Directions
  • Step #1 In the bowl of a food processor/blender fitted with a steel blade, mix the olives, garlic, anchovy fillets, rosemary, & pepper to a smooth paste.
  • Step #2 With the processor on, slowly add the olive oil until mixd, about 2 mins.
  • Step #3 Transfer the olive paste to a small bowl, & set aside.
  • Step #4 Makes about 1 1/4 c.
