Cherry Pineapple Salad Recipe

Ingredients
  • 2 (16.5 oz) cans pitted dark sweet cherries, drained with juice reserved
  • 2 (3 oz) packages cream cheese, softened
  • 1/3 c whipping cream
  • 3 (3 oz) packages cherry gelatin
  • 1 (20 oz) can pineapple tidbits, drained with juice reserved
  • 1/2 c coarsely sliced nuts
  • 2 1/3 c boiling water
  • Dash salt
  • 1/3 c lemon juice
  • 1/3 c mayonnaise

Directions
  • Step #1 In a mixing bowl, dissolve gelatin in water.
  • Step #2 Combine pineapple & cherry juices to measure 2-1/2 c; add along with lemon juice to gelatin.
  • Step #3 Divide gelatin in half.
  • Step #4 Set half of the gelatin aside & chill other half until partially set.
  • Step #5 Fold pineapple into chilled gelatin; pour this into a 13-in.
  • Step #6 x 9-in.
  • Step #7 x 2-in.
  • Step #8 pan.
  • Step #9 Chill until almost firm.
  • Step #10 Whip cream, mayonnaise, cream cheese & salt until light & fluffy.
  • Step #11 Spread over chilled gelatin layer.
  • Step #12 Refrigerate until firm.
  • Step #13 Chill remaining gelatin mixture until partially set.
  • Step #14 Fold in cherries & nuts; spread over cream cheese layer.
  • Step #15 Chill for at least 3 hrs.
