Step #2 Put the yeast mixture, egg yolks, flour, milk, salt, sugar, & melted butter in a mixer or food processor.
Step #3 mix at high speed for 40 seconds.
Step #4 Turn machine off, scrape down, & mix another few seconds.
Step #5 Pour batter into a bowl that is large enough to accommodate the rising.
Step #6 Cover loosely, & set in a warm place to rise for 1 1/2 to 2 hrs.
Step #7 Do not let the batter rise much longer or blini will taste overfermented.
Step #8 Beat egg whites until stiff.
Step #9 Fold into batter.
Step #10 Heat a heavy skillet or griddle.
Step #11 Brush with butter.
Step #12 Drop blini batter by tspfuls into hot pan.
Step #13 Turn when first side is lightly browned, & cook briefly on second side.
Step #14 Keep pancakes on a heated platter until all the batter is used.
Step #15 Arrange warm blini on a tray lined with a starched linen napkin.
Step #16 Put a small dollop of sour cream in the center of each, then a few grains of caviar.
Step #17 A strip of smoked salmon decorated with a sprig of dill may be substituted for the caviar, if desired.
Step #18 Blinis may be cooled, wrapped in foil, & put in the fridged for use the next day.
Step #19 Warm in 300F degree oven before serving.
Step #20 Makes 40 blini.
Step #21 VARIATION: Make blinis as directed, topping with a dab of sour cream, & substitute one 2-inch tip of freshly steamed asparagus for the red caviar.
