Blood Orange Gastrique Recipe

Ingredients
  • Salt & freshly ground black pepper
  • Red wine vinegar
  • 4 Thin slices red onion; soaked in cold
  • 1/4 c Freshly squeezed orange juice
  • 1/2 c Extra virgin olive oil
  • 1 Head endive; , separated into leave
  • 2 oz Tender mild greens; washed and dried
  • 1/2 ts Dijon-style mustard
  • 2 tb Pomegranate seeds
  • 1/4 c Marsala wine
  • 1 Peeled shallot; minced
  • 2 Blood oranges; (use regular oranges if blo

Directions
  • Step #1 mix the shallot with the Marsala & orange juice in a non-reactive pan.
  • Step #2 Reduce to a glaze.
  • Step #3 Add the mustard.
  • Step #4 Whisk in the olive oil in a slow steady stream.
  • Step #5 Spice up this with salt & pepper & a tsp or so of vinegar.
  • Step #6 Toss the endive leaves & greens in a bowl with half the dressing.
  • Step #7 Arrange on 4 chilled plates.
  • Step #8 Toss the oranges & pomegranate seeds in a bowl with the remaining dressing & add to the plates.
  • Step #9 Drain the onion slices & pat dry.
  • Step #10 Toss in the bowl with any remaining dressing.
  • Step #11 Garnish the salad with onions & serve as soon as possible.
  • Step #12 Yield: 4 servings.
