Blood Orange Salad With Vanilla Vinaigrette Recipe

Ingredients
  • Freshly-ground black pepper; to taste
  • 2 tb Balsamic vinegar
  • 1 c Crab meat
  • 3 Blood oranges; cut into sections
  • 4 c Cleaned salad greens
  • Salt; to taste
  • 1/2 c Olive oil
  • 1/2 lb Asparagus; blanched and cooled
  • 1/2 c Sugar
  • 3 Blood oranges; zested and juiced

Directions
  • Step #1 In a heavy bottomed pot, melt the sugar & cook this until it browns, carefully pour in the orange juice & reduce until it is a thick syrup.
  • Step #2 remove this from the stove, add the vinegar, oil, & Spice up.
  • Step #3 Set aside to cool.
  • Step #4 In a small bowl, Spice up the crab meat.
  • Step #5 Toss the greens with 1/4 c of the dressing, & half of the orange sections, Spice up with salt & pepper.
  • Step #6 Place on two salad plates.
  • Step #7 Arrange the asparagus around the plate.
  • Step #8 top this with the crab meat, & remaining orange sections.
  • Step #9 Garnish with a drizzle of dressing & the orange zest.
  • Step #10 This recipe yields 2 servings.
