Blt Salad Recipe

Ingredients
  • 1 tb Fresh lemon juice
  • 6 Bacon slices;
  • 1/4 Loaf Italian bread
  • 1 sm Red onion
  • 1 Head Boston lettuce
  • 1/4 ts Minced garlic
  • 1/2 lb Cherry tomatoes;
  • 1/4 c Mayonnaise
  • 1 tb Water

Directions
  • Step #1 In a skillet cook bacon over moderate heat, stirring every once in awhile, until crisp.
  • Step #2 Reserving 1 tbsp bacon fat in skillet, drain bacon on paper towels & crumble.
  • Step #3 Cut bread into enough 3 /4 - inch cubes to measure 1 c.
  • Step #4 Heat fat over moderately high heat until hot but not smoking & saute bread cubes with salt to taste, stirring, until; golden brown.
  • Step #5 Transfer croutons to paper towels to drain and cool.
  • Step #6 In a small bowl whisk together garlic, mayonnaise, water, lemon juice, & salt & pepper to taste.
  • Step #7 Slice onion & halve tomatoes.
  • Step #8 Tear lettuce into bitesize pieces.
  • Step #9 In a large bowl toss together onion, salt & pepper to taste, tomatoes, lettuce, half of bacon & croutons, & enough dressing to coat.
  • Step #10 Divide salad between 2 plates & top this with remaining croutons and bacon.
  • Step #11 Yield: 2 servings.
