Blueberry Cobbler Recipe

Ingredients
  • 1/2 ts Salt
  • 4 tb Butter; sliced
  • 1 1/2 c Flour
  • 1/4 c Frozen shortening; cut into large chunks
  • 5 tb Ice water
  • 4 c Blueberries
  • 5 tb Frozen butter; cubed
  • 2 c Sugar

Directions
  • Step #1 preheat your trusty oven to 450 degrees.
  • Step #2 Lightly grease an 8 x 8-inch baking pan.
  • Step #3 In the work bowl of a food processor/blender, mix the flour & salt.
  • Step #4 Quickly cut the butter & shortening into the dry mixture until the size of small peas.
  • Step #5 Dribble in the ice water a little at a time and process quickly to moisten the mixture until it starts to come together.
  • Step #6 This pastry can be made ahead of time & put in the fridged between two sheets of waxed paper until ready to use.
  • Step #7 Roll out the pastry into a large sheet, approximately 20 x 12.
  • Step #8 Lay into the prepared baking dish, carefully tucking it into the corners and allowing the extra to hang over the sides.
  • Step #9 Spread the blueberries evenly in the baking dish.
  • Step #10 Dot with the sliced butter.
  • Step #11 Sprinkle top with 1 1/2 c of the sugar.
  • Step #12 Flip the overhanging pastry over the blueberries to make a top.
  • Step #13 If pieces break off, just set them on top.
  • Step #14 The cobbler should look rustic.
  • Step #15 Sprinkle top the remaining 1/2 c sugar over the pastry.
  • Step #16 place this in preheated oven & as soon as possible reduce heat to 425F degrees.
  • Step #17 Bake for 45 mins, until dough is golden brown & berry juice bubbles up.
  • Step #18 serve this with warm vanilla ice cream Yield: 1 cobbler.
