Blueberry Mountain Cheesecake Recipe

Ingredients
  • 1 tb Cinnamon
  • 1 1/4 c Blueberries
  • 2/3 c Brown sugar
  • 4 pk put in the fridged buttermilk biscuits;
  • 2/3 c Sugar
  • 1 ts Vanilla
  • 1 1/4 Sticks margarine;
  • 1 tb Cinnamon

Directions
  • Step #1 Thoroughly grease a 10 x 4-inch tube pan.
  • Step #2 Mix 2/3 c sugar & I tbsp cinnamon.
  • Step #3 Cut biscuits in quarters.
  • Step #4 Roll each piece in sugar mixture.
  • Step #5 Arrange about one-fourth of the biscuit pieces and one-fourth of the blueberries in an even layer in pan.
  • Step #6 Place blueberries between biscuit pieces, creating a mosaic effect.
  • Step #7 Repeat three more times with remaining biscuits & blueberries, covering blueberries of one layer with biscuits in next layer to avoid a column of blueberries.
  • Step #8 In saucepan mix sugar, margarine, vanilla, cinnamon & the extra I c blueberries.
  • Step #9 Bring to a boil, reduce heat.
  • Step #10 Cook, stirring frequently until sugar is dissolved and margarine melted.
  • Step #11 Pour over biscuits in pan.
  • Step #12 Bake in a preheated 350 degree F oven for 65 mins or until done.
  • Step #13 Lift or turn out onto cake plate.
  • Step #14 Yield 8 to 10 servings.
