Blueberry Muffins Recipe

Ingredients
  • 2 tb Flaked coconut
  • 1 Keebler butter-flavored piecrust;
  • 2/3 c Carnation nonfat dry milk powder
  • 3/4 c Cool Whip Lite
  • 2 pk Philadelphia fat-free cream cheese;
  • 1/2 c Blueberry spreadable fruit spread
  • 1 1/2 ts Coconut extract
  • 1 pk Jell-O sugar-free instant vanilla pudding; mix
  • 1 c Diet Mountain Dew

Directions
  • Step #1 In a large bowl, stir cream cheese with a spoon until soft.
  • Step #2 Add dry pudding mix, dry milk powder, & Diet Mountain Dew.
  • Step #3 Mix well, using a wire whisk.
  • Step #4 mix in 1/4 c Cool Whip Lite & 1 tsp coconut extract.
  • Step #5 Pour mixture into piecrust.
  • Step #6 put in the fridge for about 15 mins.
  • Step #7 In a small bowl, mix blueberry spreadable fruit, remaining 1/2 tsp coconut extract, & remaining 1/2 c Cool Whip Lite.
  • Step #8 Spread blueberry mixture evenly over cheesecake filling.
  • Step #9 Sprinkle top coconut evenly over top.
  • Step #10 put in the fridge until ready to serve.
  • Step #11 HINT: Diet 7UP, Diet Slice, or even plain water can be used in place of the Diet Mountain Dew.
