Blueberry Orange Frappe Recipe

Ingredients
  • 1/4 c Applesauce
  • 1/3 c Sugar or substitute
  • 1 1/3 c Flour;
  • 1 c Frozen blueberries;
  • 1/4 ts Salt
  • 3/4 c Quick cooking oats
  • 3/4 c Soy milk
  • 2 ts Baking powder
  • 2 tb Cornstarch

Directions
  • Step #1 preheat your trusty oven to 400F degrees F.
  • Step #2 In medium mixing bowl, mix flour, sugar, oats, baking powder & salt.
  • Step #3 In another bowl, mix soy milk, applesauce & cornstarch.
  • Step #4 Pour this wet mixture into the dry mixture all at once.
  • Step #5 Stir until just moistened (batter will be lumpy).
  • Step #6 Fold in the blueberries, spoon batter into a non-stick 8 x 8 baking pan.
  • Step #7 Bake 20 - 25 mins, cool on rack 5 - 10 mins, serve warm.
  • Step #8 Even though this is called breakfast cake, it is very yummy at any time of the day.
  • Step #9 Moist & chewy!!! Serves: 9 Squares - calories per square 143; fat.
