Blueberry Sour Cream Pie Recipe

Ingredients
  • 3/4 ts Salt
  • 1/3 c Heavy cream; plus more
  • 6 tb Cold unsalted butter; cut into pieces
  • 1 ts Grated lemon zest
  • 3 tb Sugar; plus more
  • 2 c All-purpose flour
  • 2 lg Eggs; lightly beaten
  • 1 1/2 c Rinsed fresh blueberries; picked over
  • 1 tb Baking powder

Directions
  • Step #1 Adjust rack to center of oven, & heat to 400F degrees.
  • Step #2 Place a Silpat baking mat on a baking sheet, & set aside.
  • Step #3 In a large bowl, baking powder, 3 tbsps sugar, sift together flour, & salt.
  • Step #4 Using a pastry mixer, or two knives, cut in butter until the largest pieces are the size of small peas.
  • Step #5 stir in the blueberries & zest.
  • Step #6 Using a fork, whisk together cream & egg in a liquid measuring c.
  • Step #7 Make a well in the center of dry ingredients & pour in cream mixture.
  • Step #8 Stir lightly with fork just until dough comes together.
  • Step #9 Turn out onto a lightly floured surface, & knead a few times to mix well.
  • Step #10 Pat dough into a 6-inch square about 1 1/4 inches thick.
  • Step #11 Using a floured knife, cut into four 3-inch squares.
  • Step #12 Cut squares in half on the diagonal to form eight triangles.
  • Step #13 Transfer to prepared baking sheet.
  • Step #14 Brush tops with cream & Sprinkle top with sugar.
  • Step #15 bake this until golden brown, 20 to 22 mins.
  • Step #16 Transfer scones from baking sheet to wire racks to cool.
