Blueberry Sour Cream Pie Recipe

Ingredients
  • 3 tb Cornstarch
  • 1 1/3 c Milk
  • 1 tb Granulated sugar; divided
  • 1 c Graham Cracker Crumbs
  • 1/2 c Granulated Sugar
  • 3 c Fresh Blueberries
  • 1/3 c Butter or Margarine; melted
  • 1 ts Unflavored Gelatin
  • 1 tb Vanilla Extract
  • 1/4 c Pecans or Walnuts; finely sliced
  • 2 tb All-purpose Flour
  • 1 1/2 c Sour Cream

Directions
  • Step #1 To prepare the pie crust, mix cracker crumbs, pecans or walnuts, flour, & one tbsp sugar in a small bowl.
  • Step #2 stir in the the melted margarine or butter.
  • Step #3 Toss to mix.
  • Step #4 Press mixture onto the bottom and up sides of a 9-inch pie plate.
  • Step #5 Bake in a pre-heated 375-F degree oven for 8 mins.
  • Step #6 Cool on a wire rack.
  • Step #7 To prepare the pie filling, cornstarch, mix the one-half c sugar, & gelatin in a medium saucepan over moderate heat.
  • Step #8 Stir in milk & cook, stirring, until thickened & bubbling.
  • Step #9 In a separate mixing bowl, mix the sour cream with the warm milk mixture, slowly mixing all the ingredients.
  • Step #10 stir in the the vanilla extract.
  • Step #11 Cover & put in the fridge for 1 hr, stirring once or twice during cooling time.
  • Step #12 Stir blueberries into the sour cream mixture.
  • Step #13 Pour the filling into the cooled pie crust.
  • Step #14 Cover & chill at least 6 hrs or up to 1 day prior to serving.
  • Step #15 Garnish with extra berries before serving, if desired.
