Bollos - (sweet Goat Cheese Fritters) Recipe

Ingredients
  • 1 Spanish onion; peeled, stuck with
  • 2 Beef cheeks
  • 2 Celery ribs; cut into 1" pieces
  • 1 Capon; cut into 4 pieces
  • 2 lb Turkey breast -;
  • 2 Carrots; peeled and quartered
  • 2 Salt-packed anchovies; headed, gutted, & rinsed
  • 4 lb Veal shank
  • 1 ts Salt
  • === salsa verde ===
  • 4 Beef sausages
  • 4 tb Red wine vinegar
  • 2 lb Calf's tongue -;
  • 2 Whole cloves
  • 1 Hard-boiled egg; roughly sliced
  • 1 tb Salt-packed capers; rinsed and drained
  • 4 Cornichons
  • Freshly-ground black pepper; to taste
  • 2 tb White wine vinegar
  • 1 bn Italian parsley leaves; picked from stems
  • 1 lb Beef brisket
  • 3 qt Water

Directions
  • Step #1 Cover calf's tongue with warm water & boil 40 mins.
  • Step #2 Drain, cool & peel off outer skin & membrane.
  • Step #3 In a large soup pot, place 3 quarts water, vinegar, carrots, celery, onion & veal shank over high heat & bring to a boil.
  • Step #4 Cover and boil 45 mins.
  • Step #5 Add brisket, covered, beef cheeks & sausages & boil, 30 mins.
  • Step #6 Add capon & turkey breast & boil uncovered, 45 mins.
  • Step #7 Replace dissipated water with each step.
  • Step #8 Remove each piece of meat & arrange on a platter.
  • Step #9 To make salsa verde, hard-boiled egg, white wine vinegar, anchovies, capers, salt & pepper in food processor & mix until smooth, place parsley, cornichons, about one min.
  • Step #10 Carve meat & serve this with salsa verde.
