Boned Chicken With Apricots And Pecans Recipe

Ingredients
  • 1 qt Fish stock
  • 1 c Uncooked short grained sushi or arborio rice
  • 1 tb Tamari sauce
  • 2 Scallions, sliced
  • Rice Balls
  • 2 c Water sesame seeds
  • 2 tb Unsalted butter or margarine
  • 2 lb Squid

Directions
  • Step #1 Clean squid, reserve tentacles.
  • Step #2 Wash squid well & cut into 1/2 inch slices.
  • Step #3 In a soup kettle or large saucepan, bring stock to a boil; toss in squid & let simmer 25 mins.
  • Step #4 Add scallions, and tamari, butter, stirring until butter is melted.
  • Step #5 Serve in dog dish with rice balls.
  • Step #6 Makes about 2 quarts soup Rice Balls: In a saucepan, bring rice & water to a boil.
  • Step #7 Reduce heat & cook rice, covered, until tender & quite sticky.
  • Step #8 Remove cover & let cook.
  • Step #9 When rice is cool enough to handle, wet your hands & form rice balls 1-1/2 inches in diameter.
  • Step #10 Spread sesame seeds on a piece of wax paper & roll rice balls in them.
  • Step #11 Makes about 1 dozen.
