David's Mesquite Smoked Texas Brisket Recipe

Ingredients
  • 1/4 c Greek-style seasoning
  • 15 cloves garlic, peeled
  • 8 lbs beef brisket

Directions
  • Step #1 Make deep cuts into the brisket with a paring knife.
  • Step #2 Place cloves all the way into the cuts.
  • Step #3 Liberally sprinkle brisket with Greek seasoning.
  • Step #4 Place mesquite wood over gray/hot charcoals.
  • Step #5 Put brisket fat side down on the grill.
  • Step #6 Smoke for 2 hrs & do not turn the meat.
  • Step #7 Take the meat out & wrap tightly 2 times in extra heavy aluminum foil.
  • Step #8 Put in the oven for 2 hrs on a cookie sheet at 250 degrees F.
  • Step #9 Remove from oven & let sit (still wrapped in foil) 30 mins to 1 hr before serving to let the meat "firm up" & the juice to be absorbed.
