Bosc Pear Custard Tarts Recipe

Ingredients
  • 2 Eggs
  • 1/2 ts Nutmeg
  • 1 Bosc pear; cored & finely
  • 1/2 c Flour
  • 1 ts Baking powder
  • 1 ts Vanilla extract
  • 2 tb Sugar
  • 2 tb Butter; melted & cooled
  • 1/2 c Sour cream
  • 4 oz Mascarpone cheese
  • 1/2 c Plus 1 tbsp vegetable oil
  • sliced; fresh or canned

Directions
  • Step #1 In a large bowl, sour cream, eggs, sugar, mix mascarpone cheese, butter & vanilla.
  • Step #2 Whisk until well mixed & smooth.
  • Step #3 Mix in pear.
  • Step #4 stir in the flour, baking powder & nutmeg until just mixd.
  • Step #5 In large skillet with hot oil, drop in about one-third of batter by tbsp.
  • Step #6 Fry until golden on bottom.
  • Step #7 Turn & cook on other side until brown.
  • Step #8 remove this from skillet with a slotted spatula & drain on paper towels.
  • Step #9 Repeat procedure with remaining cheese mixture & oil.
  • Step #10 Serve pancake as soon as possible when warm.
  • Step #11 Approximately 15 mins.
