Ingredients
2 Eggs
1/2 ts Nutmeg
1 Bosc pear; cored & finely
1/2 c Flour
1 ts Baking powder
1 ts Vanilla extract
2 tb Sugar
2 tb Butter; melted & cooled
1/2 c Sour cream
4 oz Mascarpone cheese
1/2 c Plus 1 tbsp vegetable oil
sliced; fresh or canned
Directions
Step #1 In a large bowl, sour cream, eggs, sugar, mix mascarpone cheese, butter & vanilla.
Step #2 Whisk until well mixed & smooth.
Step #3 Mix in pear.
Step #4 stir in the flour, baking powder & nutmeg until just mixd.
Step #5 In large skillet with hot oil, drop in about one-third of batter by tbsp.
Step #6 Fry until golden on bottom.
Step #7 Turn & cook on other side until brown.
Step #8 remove this from skillet with a slotted spatula & drain on paper towels.
Step #9 Repeat procedure with remaining cheese mixture & oil.
Step #10 Serve pancake as soon as possible when warm.
Step #11 Approximately 15 mins.
Step #12 Per serving (excluding unknown items): 1432 Calories; 109g Fat (68% calories from fat); 27g Protein; 87g Carbohydrate; 635mg Cholesterol; 833 mg Sodium.
