Bourbon Pepper Steak Recipe

Ingredients
  • 1/2 c Red wine
  • Salt; to taste
  • Visible fat
  • 4 tb Cracked black peppercorns;
  • 1 tb Unsalted butter
  • 1/4 c Good Kentucky bourbon
  • 1 tb Pure olive oil
  • 1/2 c Brown stock
  • 4 New York cut strip steaks -; , trimmed of all

Directions
  • Step #1 Coat the steaks with the cracked pepper & Spice up this with salt.
  • Step #2 Place the olive oil in a cast-iron skillet & heat 1 min before adding the steaks.
  • Step #3 Cook over med-heat/flame 3 mins on each side for medium-rare.
  • Step #4 Remove the steaks to warm serving plates.
  • Step #5 Drain the excess fat from the pan & carefully add the bourbon, away from the heat.
  • Step #6 Reduce the heat to low & reduce the bourbon until the pan is nearly dry.
  • Step #7 Add the red wine, raise the heat to medium, & reduce by half.
  • Step #8 Add the Beef & Veal Stock, bring to a boil, cook 6 mins & "finish" by swirling the butter into the sauce.
  • Step #9 remove this from the heat & divide the sauce among the steaks.
  • Step #10 This recipe yields 4 servings.
