Bourbon Ribs Recipe

Ingredients
  • 3 lb Sweet onions; Vidalia or Texas sweets, thinly sliced
  • 1/4 c Sugar
  • 1/4 c White vinegar
  • 1 ts Salt
  • 3 tb Tomato paste
  • 3 tb Butter
  • 1 c Beef broth
  • 1 ts Freshly-ground black pepper
  • 1/2 c Bourbon
  • 2 tb Ancho chili powder

Directions
  • Step #1 Melt the butter in a large casserole over low heat/flame.
  • Step #2 Add the onions, add the salt & pepper & stir this to coat well.
  • Step #3 Cook very slowly over slow heat until the onions are soft & translucent.
  • Step #4 In rapid succession add the chili powder & stir this to incorporate fully.
  • Step #5 Stir in the tomato paste & sugar & moisten with the vinegar.
  • Step #6 Continue to cook over low heat/flame.
  • Step #7 As the liquids begin to bubble, be careful not to burn the tomato & sugar.
  • Step #8 Nothing should caramelize in this dish.
  • Step #9 Add the bourbon carefully, allowing the alcohol to burn off.
  • Step #10 Add the broth & braise, with a lid on, until the onions are nearly dry.
  • Step #11 May be served hot or cold.
  • Step #12 This recipe yields 2 to 2 1/2 c.
